Site: Other-MAIN GALLEY 
Violation: Refrigerator 4-12 was found with an ambient air temperature of 54oF. A small quantity of variety cheeses with an an internal food temperature of 48oF was found in the same refrigerator. The unit was reportedly in a defrost cycle and the food was in the refrigerator less than an hour. 
Recommendation: Refrigerators used to store potentially hazardous foods must be maintained at 40oF (4.5oC) at all times to assure that potentially hazardous foods stored therein stabilize at or below 45oF (7oC). To prevent the rapid growth of microorganisms, potentially hazardous foods must be stored at 45oF or below. 

Site: Other-MAIN GALLEY 
Violation: Many of the waiter's trays had split and separated edges making them difficult to clean. 
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition. 

Site: Other-PROVISIONS 
Violation: Nonfood contact surfaces of the band saws were corroded and paint was peeling and worn. 
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition. 

Site: Other-MAIN GALLEY 
Violation: The wash temperature on the glasswashing machine was 198oF, too high for effective detergent action. 
Recommendation: The wash temperature on automatic dishwashing machines shall be maintained according to the manufacturer's recommendations to insure proper detergent action. 

Site: Other-LIDO FOOD SERVICE 
Violation: The dishwashing machines had long curtains just prior to the final sanitizing rinse arm. The short curtains were placed between the wash and rinse compartment. 
Recommendation: Curtains shall be properly placed in dishwashing machines so as not to block the final sanitizing rinse. 

Site: Other-MAIN GALLEY 
Violation: The final rinse gauge on the flight dishwashing machine was incorrect. 
Recommendation: Machine or water line-mounted, numerically scaled, indicating thermometers, accurate to +3oF (+1.5oC), shall be provided to indicate the temperature of the water in each tank of the machine and the temperature of the final rinse water as it enters the manifold. 

Site: Other-MAIN GALLEY 
Violation: The final rinse temperature on the flight dishwashing machine was 159oF using a maximum registering thermometer. 
Recommendation: Automatic dishwashing machines utilizing hot water for sanitizing shall operate at a minimum of 165oF (74oC) measured at dish level. 

Site: Other-PRODUCTION GALLEY 
Violation: The interiors of the lower range ovens were severely corroded and were heavily soiled with burned food and rust beneath the lower insert. 
Recommendation: The food contact surfaces of all cooking equipment shall be kept free of encrusted grease deposits and other accumulated soil. 

Site: Other-LIDO FOOD SERVICE 
Violation: The interior of the undercounter refrigerator had an accumulation of ice and frost that was not easily cleanable and reduced the efficency of the cooling unit. 
Recommendation: Food-contact surfaces of refrigerators shall be easily cleanable and free of difficult-to-clean ice and frost. 

Site: Other-CHORUS LINE SERVICE BAR 
Violation: The interior of the plastic drain lines on the clean landing table were heavily soiled with food residue. 
Recommendation: Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris. 

Site: Other-PRODUCTION GALLEY 
Violation: The above ovens were infested with cockroaches. 
Recommendation: Effective measures intended to minimize the presence of cockroaches shall be utilized. 

Site: Other-MAIN GALLEY 
Violation: Grouting was recessed or missing in many areas. 
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean. 

Site: Other-CREW GALLEY 
Violation: The urinal in the crew restroom was clogged and overflowing. 
Recommendation: Toilets and urinals shall be kept free of obstructed drains.
